This chocolate candy recipe is easy enough for kids to help - no cooking required, and just two bowls and a platter or cookie sheet to wash when you're done.
Beat the egg whites until they are frothy and getting stiff, but not to the stiff peak stage. Gradually beat into this two cupfuls of confectioners' sugar. If the eggs are large, it may take a little more sugar to make this thick enough to shape into balls. Flavor with the vanilla and work well. Now roll into bite-sized balls and drop on a slightly buttered platter. Set aside for an hour or more.
Melt the chocolate in a small bowl placed over boiling water. When the chocolate is melted, organize your assembly site: put the bowl of chocolate between the cream balls and a buttered platter or cookie sheet. Pull up a chair or stool so kids can help drop the creams into the chocolate one at a time, taking them out with a fork and dropping them gently on the buttered dish. It will take half an hour or more to harden the chocolate at room temperature.
