Carefully slice your dates (my favorites are Medjools) lengthwise with a sharp knife, just enough to be able to remove the pits. Hold each pitted date between your thumb and index finger and gently squeeze enough to open the date like a small bowl.
Chop the chocolate, or grate it, into a small saucepan or bowl. Add the sugar, boiling water and vanilla extract. Place the pan or bowl over boiling water, creating a double boiler that will keep your melted chocolate liquid without boiling or scorching it. Add the nuts and/or coconut as desired. The thicker your mixture is, while still being liquid, the easier it is to handle.
Carefully spoon the chocolate mixture into the dates. When the chocolate has started to cool and harden, press the sides of each date together, until just a little chocolate shows between the halves. Allow the candy to harden at room temperature.
